Weekly Healthy Topic: How to save time, money & eat healthier by prepping ahead

With our busy family schedule & with me working in the studio a few mornings a week, having healthy food prepped ahead has been a huge life-saver.

Not only does having recipes (or just ingredients) prepped in advance save us time, it helps save us money by not having to buy unhealthy options at the drive-thru or Door Dash delivery.

This past weekend I prepped some ingredients (helpful in assembling breakfasts, salads and lunches) and even cooked up some recipes for us to take to work and for Harry to take to school.

Here are the items I prep most on the weekend to keep us eating healthy:

  • Hard-Boiled Eggs - I use my Dash Egg steamer (below) to cook 6 eggs in a flash. I add eggs to salads and bring them to work for breakfast when I'm at the studio early in the morning.
  • Baked Oatmeal Bars - I've been on a Pumpkin Baked Oatmeal and Apple Cinnamon Baked Oatmeal kick lately. I cut the oatmeal into bars and freeze. I then pack these oatmeal bars (usually with the eggs or yogurt) and I've got a healthy, filling breakfast!
  • Healthy Snack Options - Harry is usually super hungry by the time he gets off the bus. Lately we've been making our No Bake Granola Bars and Peanut Butter Protein Bars. These are easy to pack in his lunchbox or backpack and store easily in the freezer.
  • Quick Reheat Dinners - Monday's and Wednesday's we're not home until after 8, so I having some dinners that we can quickly reheat have been great. My Slow Cooker Beef Stew and my Cauliflower Chicken Fried Rice have been life-savers!

Dash Egg Steamer

This lil' guy is one of my all-time favorite kitchen tools! This egg steamer will quickly steam 6 eggs to hard-boiled. It will also do medium, soft, poached and even mini omelets. Best of all - it's under $20!

Cuisinart Slow Cooker / Multi-Cooker

After breaking the ceramic crock from 2 separate slow cookers, I went searching for a metal (non-ceramic) slow cooker. This Cuisinart Slow Cooker has been the answer. Soups, stews, meat for tacos, roasts and even oatmeal - make for the perfect set-it-and-forget-it tool!

Rubbermaid Meal Prep Containers

These containers have saved me countless amounts of money - by not having to buy breakfast or lunch out! When I've prepped my oats & yogurt or eggs in these container and eating healthier and saving money!
